I don't think pyramiding and tapering is worth it. I think you should just run them out of gear you want. If you need to adjust things that's something different.
Testosterone is definitely the bread and butter of most stacks. I think you'll get fantastic results on 200 mg a week. Try that and then you can adjust it from there.
I say drop the winstrol and add Anavar instead. Anavar has way less side effects. You can do 50 mg a day of anavar and 300 mg a week of testosterone. That's perfect.
Carnivore diet I would look into a lot of beef. I know it's expensive right now, but it's definitely the best option. Make sure you cook it medium or medium rare.
