One Pan Cheesy Beef Taco Rice (perfect for cutting meal prep)

One Pan Cheesy Beef Taco Rice (perfect for cutting meal prep)



8 Servings

Macros:

544 Calories

38 gr Carbs

18 gr Fat

49 gr Protein



Ingredients:

3 lbs (48oz) 93% lean Ground Beef (or preferably venison) -

1 medium-large diced onion

8 minced or diced garlic cloves

12 oz can tomato paste

400 gr uncooked and washed basmati rice

100 gr light shredded mozzarella

2 cups Beef stock

2 TBSP olive oil

Taco Seasoning - use store bought or like me, make your own so you can control sodium intake

a Ton of Fresh cilantro



Cooking Instructions:

1. In large 4+ Quart sauté pan, sauté chopped onion in 2 TBSP olive oil and once translucent, add in meat

2. Cook and chop meat into small pieces as it cooks

3. Add in taco seasoning , garlic and tomato paste. Mix well.

4. Rinse rice well

5. Add rice and beef stock to pan, mix well and cover

a. You may need to adjust the volume of beef stock to make sure the meat and rice are initially covered

6. Once the rice is cooked, sprinkle cheese and chopped cilantro on top and cover until cheese is melted

7. FOR MEAL PREP

a. Divide across meal prep containers and top with cheese and cilantro that will melt when you heat it

8. ENJOY!

I'm a big fan of Mexican food

probably the only food that I actually eat is authentic Spanish food if I go out which is a once every five years thing LOL
